Yaki udon (Stir-fried udon noodles with pork and vegetables)

Meat

This is a Japanese stir-fry with udon noodles, pork, vegetables, and a savory sauce. It's a very simple dish to make. Most of the work is just chopping vegetables.

Prep the sauce

Combine the Worcestershire sauce, ketchup, oyster sauce, and honey. Add a generous dusting of pepper and mix thoroughly. Set aside.

Prep the pork

Cut the pork into thin 2" slices

Prep the vegetables

  1. Mince the ginger
  2. Thinly slice the onion and cabbage leaves
  3. Julienne the carrot

Bring it together

  1. Add the vegetable oil to a large pan and place it over medium heat.
  2. Add the pork slices. Cook for 5 to 10 minutes or until they just begin to brown.
  3. Add the onions and ginger and sautée for 2 to 3 minutes.
  4. Add the remaining vegetables and fry for another 3 minutes.
  5. Add the udon noodles (2 x 200g packages) and mix.
  6. Add the sauce and mix thoroughly. I often use a spatula to flip the noodles in the pan. Cook for another 5 to 8 minutes or until the noodles, meat, and vegetables begin to caramelize.
