Yaki udon (Stir-fried udon noodles with pork and vegetables)

This is a Japanese stir-fry with udon noodles, pork, vegetables, and a savory sauce. It's a very simple dish to make. Most of the work is just chopping vegetables.

Prep the sauce:
- Combine the Worcestershire sauce, ketchup, oyster sauce, and honey. Add a generous dusting of pepper and mix thoroughly.

Prep the pork:
- Cut the pork into thin 2" slices

Prep the vegetables:
- Mince the ginger
- Thinly slice the onion and cabbage leaves
- Julienne the carrot

Cooking:
- Add the vegetable oil to a large pan and place it over medium heat.
- Add the pork slices. Cook for 5 to 10 minutes or until they just begin to brown.
- Add the onions and ginger and sautée for 2 to 3 minutes.
- Add the remaining vegetables and fry for another 3 minutes.
- Add the udon noodles (2 x 200g packages) and mix.
- Add the sauce and mix thoroughly. I often use a spatula to flip the noodles in the pan. Cook for another 5 to 8 minutes or until the noodles, meat, and vegetables begin to caramelize.

- Top with dried bonito flakes, soy sauce, and Japanese Seven Spice

  • 2 tbsp Worcestershire sauce
  • 1 tbsp Ketchup
  • 1 tbsp Oyster sauce
  • 1 tsp Honey
  • 1 lb Pork Loin
  • 1 tbsp Ginger (minced)
  • 1 Onion
  • 1 Carrot
  • 1 tbsp Vegetable oil
  • 2 package Udon noodles (200g package)
  • 3 piece Cabbage leaves
