Vegetarian Yaki Udon
Vegetarian
This dish is very easy, it can be made with any vegetables you have on hand. If you have any leftover chicken in the fridge you could add that in too. Most of the work is in prepping the vegetables. After that, it comes together quite quickly.
Prep the vegetables
- Thinly slice the onion and peppers
- Cut the cabbage into 1” pieces
- Julienne the carrots
- Chop the broccoli into small florets
- Slice the green onions into 2” pieces
- If using dried shiitake mushrooms, put them into water to re-hydrate and quarter them once they are soft.
- Mince the garlic and grate the ginger and set aside.
Prep the sauce
In a small bowl, mix the dashi powder, soy sauce, sake and mirin. Set aside.
Stir fry
- In a large pan over medium heat, add 1 tbsp of oil
- Add the onion and stir fry until tender
- Add the rest of the vegetables, along with the garlic and ginger and toss until everything is coated with oil
- Cover with a lid and reduce the heat to low. Let the ingredients steam for 3 minutes until slightly wilted
- Add the udon noodles and toss with tongs to combine
- Add the sauce and mix everything together
- Add salt and pepper to taste.
Transfer the Yaki Udon to plates and sprinkle with katsuoboshi. Enjoy!
