Serves 4.

This is a simple but delicious dish. Work-wise it largely consists of chopping vegetables. Not much to it.

Prep:
- Wash and cut cherry tomatoes into halves
- Cut olives into halves
- Wash and cut the cucumber into quarters
- Cut 1/3 of the red onion off. Take that 1/3 and finely dice it
- Add water and salt to a medium sized pot, put it over high heat. Once water is boiling, add the orzo. Cook until al dente

Make the dressing:
- Juice the lemon. A single lemon should yield around 1/4 cup of lemon juice
- Mix 1/4 cup of olive oil with the lemon juice
- Mince the clove of garlic and add it to the dressing
- Add the cumin and dijon mustard to the dressing, along with a 1/2 teaspoon of salt and a healthy amount of pepper

- In a large bowl, mix the vegetables, chick peas, orzo, and dressing
- Crumble the feta cheese over top, along with a sprinkling of pepper. Add salt to taste
- Mix until thoroughly covered

Voilà! It's dinner time.

  • 1 Red onion
  • 1 cup Orzo
  • 1 Lemon
  • 1/4 cup Olive oil
  • 1 clove Garlic
  • 1 tsp Dijon mustard
  • 1/4 tsp Cumin
  • 3/4 cup Feta cheese
  • 1 1/2 cup Chickpeas
  • 1/4 cup Parsley (fresh)
