This is a simple but delicious dish. Work-wise it largely consists of chopping vegetables. Not much to it.

Serves 4

Prep

  1. Wash and cut cherry tomatoes into halves
  2. Cut olives into halves
  3. Wash and cut the cucumber into quarters
  4. Cut 1/3 of the red onion off. Take that 1/3 and finely dice it
  5. Add water and salt to a medium sized pot, put it over high heat. Once water is boiling, add the orzo. Cook until al dente

Make the dressing

  1. Juice the lemon. A single lemon should yield around 1/4 cup of lemon juice
  2. Mix 1/4 cup of olive oil with the lemon juice
  3. Mince the clove of garlic and add it to the dressing
  4. Add the cumin and dijon mustard to the dressing, along with a 1/2 teaspoon of salt and a healthy amount of pepper

Bring it together

  1. In a large bowl, mix the vegetables, chick peas, orzo, and dressing
  2. Crumble the feta cheese over top, along with a sprinkling of pepper. Add salt to taste
  3. Mix until thoroughly covered

Voilà! It's dinner time.

  • 2 cup Cherry tomatoes
  • 1 1/2 cup Kalamata olives (pitted)
  • 1 cup Cucumber
  • 1 Red onion
  • 1 cup Orzo
  • 1 Lemon
  • 1/4 cup Olive oil
  • 1 clove Garlic
  • 1 tsp Dijon mustard
  • 1/4 tsp Cumin
  • 3/4 cup Feta cheese
  • 1 1/2 cup Chickpeas
  • 1/4 cup Parsley (fresh)
