Simple pasta with vegetables

This is an affordable dish that's easy to make. Feel free to adjust ingredients based on what you have available.

Prep

  1. Crush garlic, chop the onion, rinse and chop the red pepper and cherry tomatoes. Rinse the spinach. Chop the sundried tomatoes

Cook

  1. Pre-heat a pan on medium-low heat with a dash of olive oil
  2. Add the garlic and onion to the pan. Saute for 10-15 minutes or until golden
  3. Add the cherry tomatoes, sundried tomatoes, red pepper, and saute for another 10 minutes or so. Add a healthy pinch of salt and pepper
  4. While the vegetables are cooking, boil a large pot of water for the pasta. Add the pasta when ready
  5. Add the spinach to the vegetables, along with the butter. Saute for 10 minutes or so
  6. When the pasta is al dente, drain it, then add it to the pan with the vegetables and mix thoroughly. Add more salt and pepper to taste

Top with shredded parmesan

  • 4 clove Garlic
  • 1 Onion
  • 1 Red pepper
  • 2 cup Cherry tomatoes
  • 1 bunch Spinach
  • 1/2 cup Sun-dried tomatoes
  • 4 cup Fusilli pasta
  • 1/2 cup Parmesan cheese
  • 1 tbsp Butter
