Simple pasta with vegetables

This is a really simple, affordable dish that's easy to make. Feel free to adjust ingredients based on what you have available.

- Crush garlic, chop the onion, rinse and chop the red pepper and cherry tomatoes. Rinse the spinach. Chop the sundried tomatoes
- Pre-heat a pan on medium-low heat with a dash of olive oil
- Add the garlic and onion to the pan. Saute for 10-15 minutes or until golden
- Add the cherry tomatoes, sundried tomatoes, red pepper, and saute for another 10 minutes or so. Add a healthy pinch of salt and pepper
- While the vegetables are cooking, boil a large pot of water for the pasta. Add the pasta when ready
- Add the spinach to the vegetables, along with the butter. Saute for 10 minutes or so
- When the pasta is al dente, drain it, then add it to the pan with the vegetables and mix thoroughly. Add more salt and pepper to taste
- Top with shredded parmesan

  • 4 clove Garlic
  • 1 Onion
  • 1 Red pepper
  • 2 cup Cherry tomatoes
  • 1 bunch Spinach
  • 1/2 cup Sun-dried tomatoes
  • 4 cup Fusilli pasta
  • 1/2 cup Parmesan cheese
  • 1 tbsp Butter
