New England baked haddock

This is a great dish if you're short on time. This is especially true if you have leftover sides like rice or a salad. Preparing the fish and baking it takes less than 30 minutes.
Make the breading
- Start by preheating the oven to 425 degrees.
- Make the breading for the fish by crushing enough Ritz Crackers to fill roughly 1 1/4 cups. I like to use a mortar and pestle for crushing the crackers, but you can just as easily use your hands. You want to break the crackers up but don't pulverize them to dust.
- Zest the lemon. Put the remaining lemon aside for use once the fish is ready to be served.
- In a separate bowl, mix 4 tablespoons of melted butter, the lemon zest, 1 tsp of garlic powder, and 1 tsp of onion powder. Add the crushed Ritz crackers. Mix thoroughly until the cracker crumbs are uniformly moistened.
Cook the fish
- Place the haddock fillets in an oven safe dish. Coat the fillets with the remaining 1 tbsp of melted butter.
- Generously season the fillets with salt and pepper, then cover the fillets with the cracker mixture.
- Put the haddock in the oven and bake for 12 - 15 minutes. Check periodically, as baking time depends on the thickness of the fillets.
- Once baked, sprinkle the fillets with paprika.
Serve with a side of rice, salad or whatever else fits your mood. Garnish with lemon wedges and sliced green onions.
