Red lentil mexican soup with lime

Serves 4–6

Prepare the lentils

  1. Rinse the red lentils under cold water. Once rinsed add lentils to a small pot and cover with water
  2. Cover pot and bring to a boil. Boil lentils for a minute, then remove from heat and drain. Set aside

Prep the vegetables and make the soup

  1. Dice onion, garlic, celery stalks, and orange pepper
  2. In a large pot, heat oil over medium heat
  3. Add onion, garlic, celery, and orange pepper to pot and saute until vegetables soften
  4. Add chili powder, chipotle, 1 tsp of salt, and diced tomatoes. Stir thoroughly
  5. Add lentils and vegetable stock.
  6. Stir everything well, cover and let simmer for 20 minutes on medium-low heat
  7. Add the juice of 2 limes, the cilantro, and a splash of your favourite hot sauce to taste

Pour into bowls and garnish with diced avocado. Serve alongside some nice bread.

  • 2 clove Garlic
  • 2 piece Celery
  • 1 tbsp Olive oil
  • 2 tsp Chili powder
  • 1 can Diced tomatoes
  • 3 cup Vegetable stock
  • 2 Lime
  • 1 Avocado
  • 1 cup Cilantro (fresh)
  • 2 tbsp Chipotle
