Chicken with avocado salsa

Prep and cook the chicken

  1. In a small bowl, combine the 1 tsp salt, 1/4 tsp pepper, and 1/4 tsp cayenne.
  2. Rub onto the chicken.
  3. In a large skillet, heat the oil at a medium heat and cook the chicken until nicely browned and cooked through (about 8-10 min/side).

Prep the salsa

  1. Dice the onion, avocado, and tomato.
  2. Juice the lime.
  3. Combine the diced onion, diced tomato, and lime juice in a bowl. Fold in the diced avocado and season with salt and pepper.

Serve the chicken topped with the salsa

We recommend you pair the chicken with a side of brown rice and salad.

  • 4 Chicken breasts (boneless, skinless)
  • 2 tbsp Olive oil
  • 1/4 tsp Cayenne pepper
  • 2 tbsp Lime (juiced)
  • 1 Avocado

  • 1/4 Red onion (diced)
