Chicken with avocado salsa

Meat

- Combine the 1 tsp salt, 1/4 tsp pepper, and 1/4 tsp cayenne. Rub onto the chicken.

- In a large skillet, heat the oil and cook the chicken until nicely browned and cooked through (about 8-10 min/side).

- In another bowl, combine the diced onion, diced tomato, and lime juice. Fold in the diced avocado and season with salt and pepper.

- Serve the chicken topped with the salsa

Pair with a side of brown rice and salad.

  • 4 Chicken breasts (boneless, skinless)
  • 2 tbsp Olive oil
  • 1/4 tsp Cayenne pepper
  • 2 tbsp Lime (juiced)
  • 1 Avocado
  • 1 Tomato
  • 1/4 Red onion (diced)
