Chicken with avocado salsa

Prep and cook the chicken
- In a small bowl, combine the 1 tsp salt, 1/4 tsp pepper, and 1/4 tsp cayenne.
- Rub onto the chicken.
- In a large skillet, heat the oil at a medium heat and cook the chicken until nicely browned and cooked through (about 8-10 min/side).
Prep the salsa
- Dice the onion, avocado, and tomato.
- Juice the lime.
- Combine the diced onion, diced tomato, and lime juice in a bowl. Fold in the diced avocado and season with salt and pepper.
Serve the chicken topped with the salsa
