Meatloaf from a French Canadian (avec frites)

This is a delicious, easy to make dish. Très délicieux!

We like to make it with a side of salad to balance out the meatloaf and potatoes with mayonnaise.

Start by preheating the oven to 350F

The meatloaf:
- Finely chop the onion. Mince the garlic.
- In a large mixing bowl, combine the ground beef, onions, garlic, egg (beaten), ketchup, dijon mustard, and bread crumbs. Mix well. Season with salt and pepper.
- Mold into one large ball or two smaller balls. Place onto a baking sheet and bake 1 hour for a large ball or 45 minutes for two smaller balls.
- Optional: glaze the top of the meatloaf with barbeque sauce or ketchup halfway through cooking.

Les frites:
- Rinse and scrub the potatoes.
- Slice the potatoes into length-wise strips.
- Place potato strips in a large bowl and drizzle with 2 tbsp of vegetable oil.
- Sprinkle generously with Cajun spice and salt. Toss so the potatoes are evenly covered.
- Spread the fries evenly across two baking sheets. For maximum crispness, have the fries lay as flat as possible on the baking sheets.
- Place in oven and cook for 40 minutes or until golden brown. Sprinkle with salt and serve with the loaf.

If interested, you can make the spicy mayonnaise for dipping by mixing 4 - 5 spoonfuls of mayonnaise with 1 tsp of sriracha sauce.
