Greek chicken bowl with couscous

1. Make the marinade: mix the oregano, paprika, red pepper flakes, salt and pepper, 1/4 cup olive oil, and 2 cloves of garlic. Chop the chicken breast into 1" pieces and marinate in the spice mixture for 1 hour.

2. Prep the vegetables: chop the lettuce, cucumber, olives and dill, quarter the tomatoes

3. Make the yogurt sauce: juice 1/2 a lemon and mix with 1/2 cup of greek yogurt, 1 clove of garlic and 1 tbsp of water in a small bowl.

4. Cook the chicken in a frying pan until nicely browned.

5. Cook the couscous according to package directions

6. Assemble the bowls: layer couscous, vegetables and chicken in a bowl. Top with the lettuce, feta, olives, dill and yogurt sauce.

  • 1 Lemon
  • 1/2 cup Yogurt (plain)
  • 1/2 cup Feta
  • 1 cup Couscous
