Greek chicken bowl with couscous
Meat
Marinate the chicken
- Add 1/4 cup olive oil to small bowl.
- Mix the oregano, paprika, red pepper flakes, salt and pepper, and 2 cloves of chopped garlic into the oil.
- Chop the chicken breast into 1" pieces and marinate in the spice mixture for 1 hour.
Prep the vegetables
- Chop the red onion, cucumber, olives, and fresh dill.
- Quarter the tomatoes.
- Set aside for later.
Make the yogurt sauce
Mix the following in a small bowl:
- Juice 1/2 a lemon
- 1/2 cup of greek yogurt and 1 tbsp of water
- 1 clove of garlic, chopped
Bring it together
- Cook the chicken in a frying pan over medium heat until nicely browned.
- Cook the couscous according to package directions
- Assemble the bowls: layer couscous, vegetables and chicken in a bowl. Top with the red onion, feta, olives, dill and yogurt sauce.
