Greek chicken bowl with couscous

Meat

Marinate the chicken

  1. Add 1/4 cup olive oil to small bowl.
  2. Mix the oregano, paprika, red pepper flakes, salt and pepper, and 2 cloves of chopped garlic into the oil.
  3. Chop the chicken breast into 1" pieces and marinate in the spice mixture for 1 hour.

Prep the vegetables

  1. Chop the red onion, cucumber, olives, and fresh dill.
  2. Quarter the tomatoes.
  3. Set aside for later.

Make the yogurt sauce

Mix the following in a small bowl:

  1. Juice 1/2 a lemon
  2. 1/2 cup of greek yogurt and 1 tbsp of water
  3. 1 clove of garlic, chopped

Bring it together

  1. Cook the chicken in a frying pan over medium heat until nicely browned.
  2. Cook the couscous according to package directions
  3. Assemble the bowls: layer couscous, vegetables and chicken in a bowl. Top with the red onion, feta, olives, dill and yogurt sauce.

  • 1/2 cup Kalamata olives (pitted)
  • 1 cup Cherry tomatoes
  • 2 tbsp Dill (fresh)
  • 1 Lemon
  • 1/2 cup Yogurt (plain)
  • 1/2 cup Feta
  • 1 cup Couscous
  • 1/4 Red onion
