One of our favourites. Easy to make and tasty.

Prep

  1. Mince the garlic and chiles.
  2. Thinly slice the onion.

Cooking

  1. In a wok or large skillet, heat 1 tbsp of oil and add the onion, garlic, chiles and 1 tsp salt.
  2. When fragrant, add the beef. Cook until the beef is cooked through and starting to brown.
  3. While the beef is cooking, wash and cook the rice.
  4. Once the beef has browned, add 1 tbsp of fish sauce, 1 tsp of oyster sauce, and the sugar.
  5. Add the basil and stock or water, and stir until the basil is wilted. Remove from heat.

Cook the eggs sunnyside up (or over-easy), but best to have a runny yolk.

Serve the rice into bowls, divide the beef on top. Top with the fried egg. Garnish with a lime wedge.
