Broccoli with sun-dried tomatoes and pasta

Vegetarian

This is an easy to prepare, tasty meal. A go-to for us when we want good food with little effort. Serves 4.

Prep

  1. Mince the garlic
  2. Cut the onion into thin slices
  3. Chop the sun dried tomatoes into thin slices
  4. Cut the broccoli florets from the stalk and rinse clean

Boiling the pasta

I like to begin boiling the pasta around the same as I begin cooking the broccoli and sun-dried tomato mix. That way the pasta is finished at roughly the same time.

  1. Fill a large pot with water. Add a generous amount of salt and bring to a boil
  2. Once water is boiling, toss in the pasta (it's at your discretion how much you make) and cook until al dente

Cooking the broccoli and sub-dried tomatoes

  1. Add the olive oil to a large skillet and heat it on medium
  2. Once warm add the onions and garlic, fry until soft
  3. Add the chopped sun dried tomatoes and fry for another 5 minutes or so. If using sun dried tomatoes that don't come packaged in oil, feel free to add more olive oil if necessary
  4. Add the broccoli florets and fry for another 8-10 minutes
  5. Sprinkle red chili flakes over top
  6. Add the pasta and broccoli mix to a bowl, drizzle with olive oil and grate parmesan cheese over top (optional)
