Broccoli with sun-dried tomatoes and pasta

This is an easy to prepare, tasty meal. A go-to for us when we want good food with little effort. Serves 4.
Prep
- Mince the garlic
- Cut the onion into thin slices
- Chop the sun dried tomatoes into thin slices
- Cut the broccoli florets from the stalk and rinse clean
Boiling the pasta
I like to begin boiling the pasta around the same as I begin cooking the broccoli and sun-dried tomato mix. That way the pasta is finished at roughly the same time.
- Fill a large pot with water. Add a generous amount of salt and bring to a boil
- Once water is boiling, toss in the pasta (it's at your discretion how much you make) and cook until al dente
Cooking the broccoli and sub-dried tomatoes
- Add the olive oil to a large skillet and heat it on medium
- Once warm add the onions and garlic, fry until soft
- Add the chopped sun dried tomatoes and fry for another 5 minutes or so. If using sun dried tomatoes that don't come packaged in oil, feel free to add more olive oil if necessary
- Add the broccoli florets and fry for another 8-10 minutes
- Sprinkle red chili flakes over top
- Add the pasta and broccoli mix to a bowl, drizzle with olive oil and grate parmesan cheese over top (optional)

- 4 cup Fusilli pasta
- 2 tbsp Parmesan cheese (grated)
- 1 tsp Red chili flakes
- 1 tbsp Olive oil
